An international team of over 40 researchers suggests that a global shift to healthy, sustainable diets can reshape global agriculture. They compared a business-as-usual scenario with a transformation scenario involving the adoption of the EAT-Lancet diet, finding that the change could reduce agriculture-related net CO2 emissions by 85% by 2050.
Nutrition Insight spoke with IFPRI’s Timothy Sulser, the study co-author, to learn how these changes could impact nutrition and health.
